I would like you to meet tomato gravy. It's a tradition in our house as soon as we get extra tomatoes. And it is delicious for any meal of the day. We usually have it for dinner. My favorite part of summer!
3-4 lbs of tomatoes (cut in 1/2 and squeeze excess seeds out) then chop
4-6 slices of bacon
Worsteshire sauce TT
In a cast iron pan or any large sauté pan cook bacon. Take the bacon out and leave a couple tablespoons of the fat in the pan.
Take fresh tomatoes and cut in half.'just squeeze some of the seeds out. Doesn't have to be perfect just to get some of he bulk out and then rough chop the tomatoes.
Place the tomatoes in the sauté pan and cook down until reduced. Season with worsteshire, salt, and fresh ground pepper (if it's to acidic for your taste sprinkle in some sugar) . It should be a thick consistency it takes a good 30 minutes to reduce. Once it's reached desired thickness toast your bread and then top with gravy and a couple Slices of bacon.
It is amazing for breakfast lunch or dinner!
